Sauternes is a world-famous sweet wine - with a commune of the same name in the world-famous Bordeaux region. The secret of the sweetness of Sauternes is noble rot! This fungus causes the grape skin to become porous and the grape to shrivel up like a sultana. This makes this grape juice incredibly concentrated and sweet. A classic accompaniment to Sauternes is always goose liver, also known as foie gras. There is only one chateau that has Premier Cru Supérieur status - the world-famous Chateau d`Yquem!
